Still In the Oven

Slow-Roasted Salmon

This is our favorite way to cook salmon. No grill needed. Good for a couple of filets or a whole side of salmon.

Pre-heat oven to 250 degrees F.

Cover a cookie sheet with foil. Lay salmon skin-side down.

Spread salmon tails or filets with pesto, or with a mixture of butter and herbs—chives or fresh rosemary.

Bake for 18-20 minutes until fish is done, but moist.

The slow oven melts the natural fat in the fish, but keeps it trapped in the rosy flesh.
